Coffee Sugar Cookies Recipe

I have a Coffee Sugar Cookie recipe that I usually make at Christmas time... However, I was curious to see if one of the TotM flavors would be a success. I was not prepared for how much of a success it would be. It was like breakfast in a cookie, and they didn't last long when I shared with my friends!
So, I think it's only fair to share my recipe with you guys! I can't wait to experiment with more flavors!
(TotM) Coffee Sugar Cookies:
1 Cup unsalted butter, at room temperature
1 & 1/2 Cup Granulated White Sugar, sifted
2 eggs, room temperature
2 Tablespoons of Top of the Morning Coffee grounds
1/2 Teaspoon Vanilla Extract
2 & 1/4 Cups of All Purpose Flour, sifted
1 Teaspoon Baking Powder
1/2 Teaspoon Cinnamon
1/4 Teaspoon Salt
In a medium mixing bowl:
1) Sift together flour, baking soda, cinnamon, and salt.
In a mixing bowl:
1) Cream together butter and sugar until light
2) Add eggs, one at a time until incorporated
3) Add Vanilla, then Add Coffee Grounds
4) Slowly add Flour mixture to butter/sugar/egg mixture
Once dough is formed, allow it to sit in the fridge for one hour.
On a floured surface, roll out dough to desired thickness and cut into shapes. (I do mine a bit thicker than a 1/4 of an inch)
Bake in a preheated oven, 350°F, for 7-9 minutes- or until the bottoms of the cookies are lightly golden.
Cool on a wire rack and enjoy!
Should last in a container for about two weeks (if they last that long at all! They're very addicting!)
Bonus Info:
For plain Coffee Sugar cookies, I cover the bottoms in semi-sweet chocolate (melted semi-sweet morsels are easiest).
